Solving Grease and Grey Water Drainage in a Commercial Pantry

Commercial pantries generate a continuous flow of grease-laden grey water, making effective wastewater management essential. In spaces with finished flooring and built-in counters, conventional gravity drainage can be difficult without disruptive civil work. This case study showcases how SFA India combined the Sanigrease T24 grease trap with the Sanicom 2 lifting station to manage grease and lift grey water efficiently. The compact under-counter installation provided a practical drainage solution while preserving the existing pantry setup.

Sanicom 2 + Sanigrease T 24

Commercial pantries and dishwashing stations generate a constant stream of grease-laden grey water, and when the space already has finished flooring and built-in counters, conventional gravity drainage is rarely an option. This case study looks at how SFA India paired Sanigrease T24 grease trap with a Sanicom 2 lifting station to solve exactly that problem, without any civil work.

The Challenge

A commercial pantry was facing a wastewater drainage challenge in its dishwashing and utensil-cleaning area. The setup included stainless-steel washing counters, dish racks, and a connected dishwashing unit, resulting in a continuous flow of grey water from rinsing, washing, and daily pantry operations. Since the wastewater could contain food residue, oil, and grease, direct discharge into the drainage line could lead to pipe blockages, foul odour, and maintenance issues over time. The area also had finished flooring, installed equipment, and limited under-counter space, making it difficult to create a conventional gravity drainage system without major civil modifications or disruption to operations.

The Solution

SFA India provided an integrated solution by installing the Sanigrease T24 and Sanicom 2 within the available under-counter space. The Sanigrease T24 helps separate grease, oil, and food particles from the wastewater before it enters the drainage system, reducing the risk of blockages and improving hygiene. The Sanicom 2 then pumps the grey water efficiently to the available drainage line, even where gravity drainage is not possible. Both units were installed neatly beneath the stainless-steel counter and connected to the existing plumbing, allowing the pantry to operate smoothly while avoiding extensive modifications to the finished site.

About the Sanigrease T24

The Sanigrease T24 is a compact grease trap designed to separate fats, oils, and grease (FOG) from wastewater before it reaches the drainage line. Built from high-quality PE and connected through a 50 mm inlet and outlet, it works by letting grease rise and collect in a dedicated trap while the treated water passes through to the outlet. With a total tank volume of 24 litres and a maximum grease storage capacity of 8 litres, it needs to be emptied and cleaned daily to keep performing effectively, which suits a dishwashing station's routine cleaning schedule.

  • Removes and traps fats, oil, and grease: before the wastewater reaches the drain
  • Prevents drain blockages: reduces long-term maintenance on the drainage line
  • Durable construction: built with high-quality PE materials
  • Compact footprint: fits under a counter or sink without civil work
  • Easy servicing: opens and empties without special tools

Applications of the Sanigrease T24:

  • Commercial kitchen and pantry dishwashing stations
  • Food vans/trucks and mobile dishwashers
  • Temporary catering facilities and pop-up restaurants
  • Any under-counter setup requiring occasional grease separation

About the Sanicom 2

The Sanicom 2 is a dual-motor grey water lifting station built for continuous commercial use. Once the Sanigrease T24 has separated the grease, the Sanicom 2 takes over, lifting the remaining grey water up to 15 metres vertically and discharging it through 50 mm pipework, even where the drainage line sits above the fixture. Its two independent motors mean a second pump takes over automatically if the first is overloaded, so the pantry keeps draining even during peak service. With a 34-litre tank and the ability to handle water up to 90°C for short periods, it is built for the kind of continuous rinsing and washing a commercial dishwashing area produces.

  • Dual-motor reliability: a second motor acts as a failsafe backup for continuous uptime
  • Long reach: pumps grey water up to 15 metres vertically through 50 mm pipework
  • Handles hot water: rated for temperatures up to 90°C for short periods
  • No core cutting or pit digging: floor-standing design installs directly on the ground
  • Easy maintenance: direct access to the motor and electrical parts for servicing
  • Built-in alarm: level monitoring alerts if intervention is needed

Applications of the Sanicom 2:

  • Commercial kitchens, cafes, and restaurants
  • Hotels, resorts, and hospitality kitchens
  • Hospitals, clinics, and institutional kitchens
  • Laundromats, car washes, and other high-volume grey water sites

Why This Combination Works for Commercial Pantries

Grease separation and grey water lifting solve two different problems, and a commercial pantry usually needs both. The Sanigrease T24 protects the drainage line from the fats and oils that a dishwashing station produces, while the Sanicom 2 moves that treated grey water to a drainage point the layout doesn't naturally allow for. Installing both units under the counter meant SFA India could solve the pantry's drainage challenge without breaking the finished floor or disrupting the rest of the kitchen.
